Colloidal silica can be used as a flocculation agent for beverage applications as well as water treatment.
In beverage applications, the large active surface of the silica particles flocculates with undesirable proteins and phenolics to remove them from the liquid by sedimentation. This will improve the taste, appearance and shelf life of beverages like fruit juices and ciders, vinegar, and white wine. Also, colloidal silica can be used for beer clarification to remove the protein and tannin complexes that encourage chill haze formation.
In water treatment applications, the function is basically the same - silica particles help flocculate undesirable proteins and other suspended and dissolved solids for easy removal. Silica can also be used to adjust the charge of the system to either neutralize existing charge or even create charge within systems that have become charge stable.
