Sea bass in salt crust

Ingredients:

  • 1 sea bass ± 1,5 kg
  • 3 kg coarse salt (JOZO® Grof Zeezout)
  • laurel
  • thyme
  • 200 g salted butter
  • 1 lemon
  • pepper

Preparation:

Clean, gut and scale the bass carefully. Pepper the inside of the fish and stuff with thyme and laurel. Strooi binnen in de vis peper en vul op met tijm en laurier. Preheat the oven to 240°C. Put oil and a layer of salt in an earthenware dish. Lay the fish on top of the salt and cover the fish with the remaining salt. Place the dish in the preheated oven and cook for 45 minutes. Melt the salted butter and add the juice of 1 lemon. Remove the fish dish from the oven and serve at the table. After breaking the crust a wonderful aroma will escape from the fish. Serve the sauce separately. Serve with steamed potatoes and beans. The sauce can be replaced by a tasty olive oil.
