Sweet and sour chicken with pineapple

Ingredients:

  • 6 chicken breasts
  • 500 ml frying fat

Marinade :

  • 15 ml oyster sauce
  • 15 ml soy sauce
  • 5 gr coarse sea salt (JOZO® Grof Zeezout)
  • Pepper

Vegetables:

  • 6 pineapple slices (fresh or canned)
  • 1 chopped green pepper
  • 1 thinly sliced carrot

Butter:

  • 10 gr baking powder
  • 375 gr flour
  • 2,5 gr coarse sea salt (JOZO® Grof Zeezout)
  • 5 gr sugar
  • 375 ml water
  • 10 gr onion, chopped
  • 60 ml vegetable oil

Sweet and sour sauce:

  • 30 gr brown sugar
  • 100 ml pineapple juice
  • 30 gr cornflour, mixed with water used as thickening agent
  • 45 ml rice wine

Preparation:

Cut the chicken breast in medium size pieces. Mix the ingredients for the marinade in a large bowl and add the chicken. Mix thoroughly. Leave to marinate for 15 minutes. Put the pineapple, green pepper and carrot in a separate bowl. Mix the baking powder and flower add some salt and sugar and stir whilst adding the oil and water. Add chopped onion. Cover the chicken with the batter. Heat the frying oil in the wok to a high heat and fry the chicken pieces very quickly. Drain the chicken pieces on kitchen paper before serving them in a bowl.

To make the sauce melt the sugar in a heavy-bottomed pan with high temperature and with constant stirring, so the sugar does not burn. Add the pineapple juice and salt when the sugars is melted. Then add the vegetables and let the mixture boil. Add the cornflour mixture to make the sauce thicker if necessary and finally add some salt and vinegar. Serve the chicken together with the vegetables.
